TOPSY TURVY PIE - from Barbara Cline
The pie is an apple pie with a different twist. The pie is called TOPSY TURVY because as soon as it is baked, it is turned out of the pie plate upside down on a serving dish to reveal a caramel and nut glaze. Serve warm with vanilla ice cream. You have a sumptuous dessert!
1/4 cup softened butter or margarine
1/2 cup pecan pieces
1/3 -1/2 cup brown sugar
Pastry for 2-crust deep 9-inch pie plate
4 cups sliced apples
2/3 cup granulated sugar
1/4 cup all purpose flour
1/2 teaspoon ground cinnamon
Generously spread some margarine in pie plate including the bottom and sides. Sprinkle with pecans and brown sugar. Place bottom crust over brown sugar. Moisten edge with a little water.
Combine apples, sugar, flour and cinnamon. Place in crust. Top with second crust. Crimp edges together. Cut slashes in top crust to allow steam to escape.
Bake in 425°F oven for 15 minutes. Reduce temperature to 350°F and continue baking for about 40 minutes or until apples are soft and it smells yummy! Remove from oven and cool on baking rack for 3 minutes, then invert carefully onto a large serving plate.
Serves 8.

Barbara's Tips: Although matters of taste are different, Barbara believes that Cortland apples are superior in this recipe! And she also says;I believe the best pastry is made with lard.
